
if there’s one thing you should know about the goat, it’s that he’s un. pre. dict. able.
so yeah, after a trip to kilgus farm in fairbury, illinois last week, where the goat, some friends, and i tasted, among other things, the veal the farm is preparing to make available to chicago (we’ll be serving it at the restaurant!!), the goat asked for a sit down with me.
his brilliant idea, he said while eating a taco from big star, was to come out of retirement. yeah, maybe the wandering is over, but that doesn’t mean we have to stop the parties! so how about inviting a couple friends to come along and cook with us, and maybe call up those guys from three floyds, and we show everyone how awesome this kilgus veal is…
friggin’ goat. he ate the taco so fast, a chunk of wax paper was stuck in his teeth.
but, i thought it over, and i’m game!!!
so coming up, on april 11th, the logan square kitchen is opening its doors to kilgus, some friends, the goat, and if you’re crazy enough to even consider it, you!
tickets will be on sale at the turn of the month (we’re looking at about fifty-plus on sale) for $100 each.
and what does a hundred smackers get you?
a kilgus farm veal dinner cooked by myself, boka’s giuseppe tentori, and primehouse’s rick gresh. each of us will start off with a passed hor d’oeuvre paired with three floyds beer, followed by a three-course meal, where you supply the booze (we wanted to try something different this time around. chicago has the byob spirit!), finished by that other four-legged friend, black dog and jessie oloroso.
and now that i’ve had time to think it over, am i crazy or did the goat pull a fast one on me? rick bayless has done great things with kilgus farm’s goat at his restaurants… i’m thinking the goat solely wanted to save his hide, so instead threw the veal under the, er, bus…
