always hungry (and thirsty): the ugly root… celery root

celery root, also known as celeriac, may be ugly on the outside but the inside has a beautifully delicate celery flavor that is great raw in salads or cooked in soups and purees.  because it is a root, it begins its season in the summer but is available through the fall and winter as well.  next time you see this brain like looking veg, just grab one and give it a try.

1 celery root, julienned

1/2 t sambal

1/2 t dijon

2 T white balsamic

3 T EVOO

3 strips bacon, crisped and crumbled

1 egg, hard boiled and chopped

2 T kalamata olives, pitted and chopped

1 T basil, chiffonade

salt and pepper
