1) make sure your crab is still alive like any shellfish so it’s really fresh.

2) cut off the face using a clean pair of scissors (yes, i said cut off the face). cut back far enough so it cuts right through the brain so it dies right away.

3) flip the crab over, and pull off the back tail.

4) cut the tail off

5) flip the crab back over so the top is facing up, and pull up the flaps on the side of the crab. now the lungs will be revealed.

6) and you don’t want to eat them. so just go ahead and pull out the lungs on both sides of the crabs.

7) the yellow part you see here if you squeeze the crab a little is the tamale i mentioned yesterday in my blog, it’s what has the really good crab flavor so don’t get rid of it!

8) just rinse it off in some water, and now it’s ready to fry up!
