well the restaurant is coming along, what seemed slowly but surely, but now at a rapid pace. and i am freakin’ out. not really… i am very excited, but just after so much time to have it so near is crazy!
nowadays we have a working list of things we need to make final decisions on. things we have been talking about for a while and finally need to just get done. we meet many times a week to go over logos, the website, the management staff, the plates and silver, and of course the one thing that rob and kevin (my lovely partners) have yet to see, the menu.
when i was being interviewed recently and was asked, ‘so tell me about the menu’, i responded, ‘well, there will be one.’
not that i do not have multiple drafts and do not think about it all the time, i just was unsure of the exact opening date which will of course have a huge effect on the menu since it is very focused on seasonal and local ingredients.
but one thing that is finalized is the design, so i thought i would share a couple of computer generated renderings of what you will see in about ten weeks. i can not wait to see it myself, as i am sure these beautiful renderings hardly do the real thing justice.
the bar is one of my favorite design elements. our designer, karen, from 555 design found a number of old fireplaces that will be polished off and used to create a gorgeous and unique backbar. for those who know me, and for many of you that do not, you know that the bar and i are dear friends. i am excited that we will be serving an array of north american craft beers. my friend lincoln who works with our friends at three floyds is helping with the beer list, as he knows more about beer than anyone i know.

i am also excited for the wine list which we’ll begin piecing together in a couple of weeks. i remember the first few wine tastings at scylla where my notes were pretty clear, yum or yuck, as to what made the list. Yes, thing have changed. i am looking forward to finding some unique boutique wines that just scream for delicious food to bring out the layers of flavor.
of course we will be featuring some tasty cocktails as well. i am in the midst of creating a cocktail list for my cookbook at the moment, and would say those served at the restaurant will be of the same vain. hitting every part of your palate with many fresh, seasonal ingredients.
