new video: chocolate sourdough w/ fried green pepitas


i’ve said before that i want to use the blog to share stories from the restaurant that can’t be captured in 140 characters or a short facebook post, but things happen, and i just haven’t been able to get to it. well, yesterday that changed.

when talking about girl & the goat, there’s a whole list of people that play a crucial role in the restaurant’s function. from macy, who answers the phone that never stops ringing starting early in the morning, to our butcher enoch, to the prep cooks and dishwashers and everyone else on staff, and of course the farmers and vendors that bring us our food and spirits. i mean, the list goes on and on. that’s why we focused on a specific niche of the restaurant that i think really makes us unique—apparently the reviewers do, too. lots of them bring up that we charge for bread—and that’s our baker greg wade. a lot of you have probably seen greg’s breads on twitter or facebook before, because they photograph so well. even on a camera phone! and greg’s in the restaurant every morning churning out three different breads, baked fresh for that night’s service.

yesterday, greg happened to be working on a brand new bread. chocolate sourdough. we have a great starter for sourdough and greg and i both talked about utilizing it more. who doesn’t love a good sourdough, right? but what separates greg from other in house bakers is that greg has the freedom to get as creative as he wants with a bread concept, and he really takes advantage of it. in the video you’ll hear him talking about why we name our breads funky things, and reference that a baguette is a baguette. everyone knows what it is. the same can be said for sourdough, right? so that’s why greg’s sourdough from yesterday not only was baked with chocolate in the dough, but also fried green pumpkin seeds. the gourds are at the markets now, so this is a new bread really reflects the season! that, and he whipped up a guajillo pepper and cinnamon butter as well as a pumpkin puree to go along side the bread.
